Sweet City Cakes & Pastries comes to Edmond

EDMOND — With 21 years baking experience to her credit, Nishika Dias Weerasinha has opened Sweet City Cakes & Pastries specializing in custom cakes, cupcakes, cookies and cannolis.

Whether celebrating a birthday, anniversary or graduation, Sweet City is the place to go for a cake made just for your specifications.

Specializing in one-of-a-kind custom wedding cakes designed specifically for each bride, cakes for wedding showers and baby showers may also be made to order.

“I grew up in Sri Lanka baking with my sister who had a business selling wedding cakes,” Dias Weerasinha said, “and I took the business over when she moved out of the country.”

Ten years ago Dias Weerasinha and her family moved to Edmond where she started working at a local bakery and baking and decorating cakes for friends. She also found time to attend Platt College where she earned a Culinary Associate degree.

“The demand for my custom decorated cakes has grown so that my husband, Nishantha and I decided it was time to open a bakery,” Nishika said.

Three months ago they opened Sweet City where Nishika helps customers make their cake fantasies come true.

Nishika said she enjoys creating wedding cakes because each one brings with it a challenge and her desire to make it the cake of the bride’s dreams, “although I will work with anyone to create the cake they want no matter what the occasion.”

Each sugar flower used on the cakes is painstakingly made by Nishika and depending on the type of flower can take hours to make.

“Italian Cream Cake is very popular at this time for cakes,” Nishika said, “although our Signature chocolate, Red Velvet and German chocolate cakes are also popular.

“I always like to challenge myself every day,” she added.

To date one of her biggest challenges is delivering a six layer wedding cake.

“We make it in two parts and put it together on site,” Nishika said. “Six layers is really heavy and depending on what is between the layers, like frosting with nuts, it can be even heavier.”

Nishika said she is introducing a cake similar to what is baked in Sri Lanka for wedding cakes.

“It is a very rich, moist spice cake filled with fruit and nuts and topped with an almond paste icing,” Nishika said. “I baked one for a bridal shower held at the University of Central Oklahoma recently. Each guest received a small box of cake as a gift as is the custom in Sri Lanka.”

Nishika said the bride and the guests really liked the idea and thought the cake was delicious.

The display case at the bakery is always filled with slices of cakes, cupcakes, cookies and cannolis. Cannoli are Sicilian pastry desserts and are little fried pastry rolls filled with a sweet creamy filling.

Sweet City will be giving away 100 cannolis to the first 100 customers coming through the door Wednesday. The bakery also will invite customers that day to enter a drawing to win a $25 gift certificate toward a purchase of a special occasion cake.

Nishika has a special treat lined up for Thanksgiving and Christmas when orders will be taken for gift baskets.

“The baskets will need to be ordered at least a week in advance,” Nishika said. “The baskets will include seasonal cakes and cookies including a fruit and nut spice cake, a loaf of pumpkin spice cake or ginger cake and mint chocolate cookies, chocolate chip brownies and toffee caramel squares or chocolate shortbread cookies and iced sugar cookies with holiday motifs on them.”
