Taco Mayo freshens up look, menu

EDMOND — Taco Mayo is bringing Fresh Mex to Edmond, which will include fresh made chips and tortillas all day long.

Taco Mayo at 1430 N. Santa Fe re-opened its doors March 22 following extensive exterior and kitchen renovations that began March 11.

The Edmond location is the 23rd Taco Mayo to convert to the new menu. The Fresh Mex menu features “create your own” burritos, nachos and salads. Old favorites from the Taco Mayo menu still will be available, like the beef tacos, bean burritos, tostadas, taco burger and potato locos.

“We wanted to re-image our store,” said Mike Dvorak, the Edmond franchisee owner. “And with that we wanted to change our precooked, ready-to-serve food to fresh food made daily in the Taco Mayo kitchen.”

Randy Earnhart, chairman for Taco Mayo, stated in a press release that Taco Mayo has developed a loyal customer base in the Edmond area and is excited to upgrade the Santa Fe location to the newest image and that the Taco Mayo team is focused on serving the finest products in their segment and providing the best service in town.

Renowned award-winning Chef Kurt Fleischfresser developed new flavor profiles for Taco Mayo’s chicken and steak that is cooked fresh all day long on a patented flat grill. Along with creating new flavors for the new menu, Fleischfresser also enhanced Taco Mayo’s classic recipes to make sure that they are up to today’s nutritional guidelines. In a press release, Fleischfresser expressed his excitement to work with Taco Mayo and be able to focus on nutrition without sacrificing taste and actually being able to add more flavors.

“We are already feeling the impact of the re-imaging,” said Ashley Grier, the general manager at Taco Mayo. “All of our customers have loved the new concept and the fresh food, and I feel like we have already been so much busier.”

Dvorak owns three other Taco Mayo’s locations in Oklahoma — Stillwater, Blackwell and Perry. His Edmond store is the first to undergo the re-imagining but he has future plans to update his three other locations.
