Top That! Pizza brings ‘Create Your Own’ pizza to Edmond

EDMOND — A personal pizza means just that at Top That! Pizza, recently opened in Edmond at 1389 E. 15th St. The store is up and running with its personal pizzas and catering service ready for Edmond residents.

Store owner Doug Wright, corporate CFO Jerry Dodson and General Manager Allen Shamblin were all on hand for the store’s grand opening on Friday.

Customers can order online or call in, but the wait from start to finish is only about 3 minutes for the pizza of choice.

With more than 60 toppings to choose from including three types of pizza dough, and nine sauce toppings ranging from Bold Italian Red marinara to Sweet Roma Red and Angry Red sauce, customers may also choose from basil pesto, two kinds of alfredo, barbecue and Thai peanut sauce.

The business is creating and defining a new category in the pizza industry. The concept lets guests watch and oversee the creation of either a 10-inch or 6-inch personal pizza in much the same way as they might in a sub sandwich shop, choosing from a white, multigrain or honey wheat crust, sauce of choice and then vegetables, meats and cheeses. The customer is presented with their freshly baked pizzas in less than three minutes after they are ordered and pay a single price — no matter what or how much they put on their pizzas.

“The pizza just needs to be able to run through the convection oven,” said Lee Glasgow, store manager.

The restaurant offers eight signature pizzas for days when the customer doesn’t want to make one more decision, including Philly Cheesesteak, Aloha Canada, ’Cue the Chicken, All You Can Meat, Hottie, (includes Angry Red sauce, whole milk mozzarella, jalapenos, hot links, sausage, pepperoni and red onion), Paso Chicken Pesto, Zorba the Veggie and Thai Breaker.

Right now the store is celebrating Octoberfest through Dec. 31 with sausages offered as toppings including bratwurst, chorizo, Polish and hot links.

Jan. 1 Top That! will help out customers with those New Year’s Resolutions with PieLite pizzas. Offerings will include four 10-inch pizzas all under 525 calories.

Pizzas top out at $7.49 for the 10-inch and children 10 years old and younger are offered a special meal of a 6-inch pizza, small drink and two Oreos for $4.49.

Recognized as the world’s first pizza restaurant specializing in quick, personal-sized pizzas with unlimited toppings for a single affordable price, Top That! Pizza Edmond’s franchise joins franchises in Colorado and Texas with plans to open other pizzarias in four additional states soon.

“We are an international pizza chain with one recently opening in Dubai,” Glasgow said.

The Edmond location features the innovative Coca-Cola Freestyle fountain with its thousands of beverage combinations. Other offerings include side salads, slices of pie and fresh cookies from Eileen’s in Edmond.

Wright owns Strategic Solutions Group Inc., a tax and economic incentives firm in Tulsa. The business helps identify and apply for government incentives that help large and small Oklahoma companies — some of which are located in Edmond — impact their bottom lines.  

“I’ve been following the development of this concept from the very beginning and was impressed with its potential for national and international growth,” Wright said. “And when I learned that Jerry was part of the team, I decided to look into bringing Top That! Pizza to the Oklahoma City area because I knew he and Allen were a proven team that knew restaurant operations inside and out.”

Dodson, a long-time pizza industry veteran, was instrumental in helping to develop Top That! Pizza’s prototype. He served as the concept’s chief financial officer and operations consultant as the restaurant went from an idea to an open “test store” and finally to a full-fledged franchise system.

At one time, he was one of Mazzio’s Pizza’s largest franchisees, owning and operating 25 units in Missouri, Illinois, Kansas, Arkansas and Texas. He also was an operating partner of 16 Schlotzsky’s Deli units, owned several Sonic franchises and helped QuikTrip Corporation launch their branded food program.

“I never dreamed I would get back into the pizza restaurant industry,” Dodson said, “but when I was presented with the opportunity to help create a new category of pizza restaurant, I couldn’t resist.”

Dodson and Shamblin are planning on opening multiple locations in the Oklahoma City metro area over the next few years.

Top That! Pizza’s first unit opened in October of 2010 in Tulsa, the brain-child of restaurant marketing specialists Lori and Jeff Walderich. The company began offering franchises in January of 2011, with the first franchise opening in October of that year in Broken Arrow.
