Renovation plans for a new Aspen Coffee Company location have been submitted and approved by the City of Edmond.
Aspen Coffee Company will open a fourth location just west of the intersection of 15th and Broadway streets. The company will locate in the same building as Let's Do Greek restaurant at 180 W. 15th St.
Construction on the 1,750-square-foot space is expected to begin this week by DH French Construction. Plans have the store opening in the middle of April.
Plans call for adding 10-15 employees.
Matt Johnston is co-founder of Aspen Coffee and will manage the Edmond location. Johnston received a degree from Oklahoma State University in Hotel and Restaurant Management.
“We have been thinking about expansion for many years now and decided on Edmond late last year,” Johnston said.
The new location will feature similar menu items as the location on Lakeview in Stillwater. It will include drip coffee, espresso drinks, fresh baked goods and a variety of breakfast and lunch items. The most popular drink, the frozen granita, also will be sold.
Aspen’s coffee is roasted in small batches in Stillwater. Aspen purchases beans from seven countries and creates custom blends that are brewed daily. Beans and ground coffee are also available for purchase.
“Aspen is a strong Stillwater tradition that we are excited to share with a new part of Oklahoma,” Johnston said.
Aspen Coffee Company was founded in Stillwater in 1994. There are currently three locations open in the Stillwater area.
