Gremolata flavored grilled chicken
Nadine Taylor of Ellicott City, Md., lost one of her favorite recipes for making grilled or roasted chicken gremolata. She took the recipe card with her to the grocery store and left it in her cart by mistake. She says she has been unable to re-create the chicken dish that was so well liked by her family and friends. Carol Anne Cassady of Bel Air, Md., e-mailed me a recipe she had from Gourmet magazine for lemon pepper chicken with thyme gremolata that she has used for years. A gremolata is a classic Italian garnish most commonly made with minced parsley or thyme, lemon peel and garlic.
GRILLED LEMON PEPPER CHICKEN WITH THYME GREMOLATA
Ingredients:
Marinade:
1/4 cup fresh lemon juice
1 tablespoon freshly ground pepper
1/2 tablespoon salt
1/2 cup extra-virgin olive oil
3 white boneless skinless chicken breasts
Gremolata:
1 tablespoon thyme leaves
2 large garlic cloves, minced
1 teaspoon freshly grated lemon zest
Directions:
In a bowl, whisk lemon juice, pepper and salt and add oil in a stream, whisking until marinade is emulsified. Flatten chicken breasts to 1/4-inch thick between plastic sheets with a meat pounder or rolling pin. Place chicken breasts and marinade in a resealable plastic bag for at least 30 minutes (several hours is better) in the refrigerator. Preheat grill, make gremolata; set aside. Grill chicken on an oiled rack 5 inches to 6 inches over glowing coals until just cooked through. Turn once. To make gremolata: Combine the thyme leaves, minced garlic and freshly grated lemon zest in the bowl of a food processor. Blend until all three ingredients are well combined.
Serve chicken sprinkled with the gremolata and garnished with lemon wedges and thyme springs sprigs.
Makes 6 servings.

Terry Smith of Baltimore has tried for years to locate the recipe for the “Bridge Cookies” that were sold at Bond Bakery and by the bakery’s route salesman in the ’40s and ’50s. They were spice cookies that were shaped like the suits in a deck of cards — heart, spades, diamonds and clubs.

Pet sitters a good travel option
Q: The last two times we boarded our dog — a 9-year-old Shih Tzu — she came home with a nasty cough that lasted for two or three weeks. My husband and I are planning a couple of trips in the coming months where we’ll be flying, so we’re thinking of having a pet sitter come to the house to tend “Trinket,” but we don’t know anyone who offers this service. Brown wins final Yard of the Week

OKLAHOMA CITY — Oklahoma City University hosted its second annual Islam Day Thursday to encourage cultural understanding with various campus activities.
Islam Day at OCU falls in the midst of the holy month of Ramadan, which is celebrated this year from Aug. 11 to Sept. 9. Celebrated during the ninth month of the Islamic calendar, more than 1 billion Muslims around the world fast from dawn until sunset each day. -
Edmond church plans flood relief benefit
An Edmond church is planning a second event to benefit victims of the June 14 flash flooding.
John Huss, pastor of outreach and discipleship for Holy Trinity Lutheran Church, 308 N.W. 164th St., said the flood is nearly three months past, but the recovery continues for those affected. They include dozens of Edmond-area families.
On Sept. 12 the church will have a community picnic event beginning at 4 p.m. There will be food, live music and games during the event at the church. -
7 imprisoned Iranian Baha’i receive harsh sentences
Once again, the American Baha’i Community including Baha’is from the Oklahoma City metro area are calling on Congress for help in the case of the seven imprisoned Baha’is of Iran.
The international Baha’i community was outraged at the news of the 20-year sentence for the seven Baha’i leaders which was just recently confirmed. The five men and two women imprisoned were arrested in May 2008 and later falsely charged with “spying for foreigners,” as well as “spreading corruption on Earth” and “cooperating with Israel.” -
30,000 expected to attend National Baptist Convention
The country’s largest African-American denomination, the National Baptist Convention U.S.A. Inc., will hold its 130th annual meeting Sept. 6-10 at the downtown Convention Center in Kansas City, Mo.
