Chef Dave Fouts joins Edmond Sun as columnist

EDMOND — The Edmond Sun welcomes Chef Dave Fouts as a new contributing columnist.

Chef Dave, an Edmond resident, will write a weekly food column published each Wednesday with emphasis on health and wellness. The focus will be three-pronged with articles on local food, personal stories and travels with Chef Dave.

“The local food approach will be highlighting local restaurants in a positive way,” Fouts said. “The personal articles will be about Oklahomans who produce food products for sale and recipes utilizing those products, and the travel stories will be about trips I take visiting food sources throughout the nation.”

Today, on page A7, Chef Dave will be writing about appetizers.

“I will go into more detail about the historical background as well as provide recipes about appetizers,” Fouts said. “In addition all the recipes I provide will have a nutritional information provided by Vicki Bovee who holds a Master of Science in nutrition and dietetics degree and is a Registered Dietitian.”

In addition to writing weekly articles, Chef Dave will be going into five Edmond schools this spring offering Chef Dave Health Weeks.

“Ruthie Rayner, the assistant principal at Orvis Risner, and I wrote, applied for and were awarded a $5,000 grant that will be used to provide nutrition information and healthy meal tips for three elementary schools, a middle school and Boulevard Academy,” Fouts said.

Chef Dave is consulting with and will be the executive chef for Sage Gourmet Cafe and Market, slated to open in January in Oklahoma City.

“The food in the cafe will be all natural and organic using foods and products made in Oklahoma,” Chef Dave said.

Recently he was appointed the national spokesperson for Midwest Obesity.

“I will be speaking nationally to culinary professionals on healthy meal planning, menu development and food alternatives,” Chef Dave said.

He is the exclusive chef for WLS Lifestyles magazine and writes for Obesity Help as well as serving on the Obesity Action Coalition, the only organization that lobbies Congress for funding on obesity issues.

He is a graduate of the Florida Culinary Institute in West Palm Beach, Fla.

“I have worked for the five-star, five-diamond hotel in Palm Beach, The Breakers,” Fouts said.

He also has served as the executive chef for the Omni Hotels and the Hippocrates Health Institute in West Palm Beach, an all-vegan homeopathic resort.

His most recent of four published cookbooks is “90 Ways to Ditch Your Diet.”

“The cookbook is a 30-day meal plan based on 1,200 calories a day including three meals and three snacks,” he said.

Fouts’ wife, Mary, teaches second grade at Orvis Risner Elementary School and they have two children, 8-year-old Noah and 4-year-old Michael.

    The 2010 Census is well under way, with the U.S. Census Bureau mailing 2010 Census questionnaires to about 120 million addresses nationwide. The questionnaires will arrive March 15-17.
