EDMOND — In response to recommendations made in May by the services of inTEAM Associates hired to assess the overall Edmond Public Schools Child Nutrition department function, a Child Nutrition Advisory Committee was set in place.
The advisory committee includes 13 members.
The first meeting was May 6, and committee members selected three top priorities with sub-committees formed, according to a report submitted to the Edmond Board of Education this month.
Meeting Nutritional Goals with Kid-Friendly Food members are Amy Herrold, Christine Lugafet, Catherine Palmer, Terri Morton and Angie Dean. Among the 15 suggestions made were:
• Offer an attractive, small, boxed salad in a clear container.
• Buy book “Deceptively Delicious” by Jessica Seinfeld and use it for ideas to sneak veggies into scratch-made entrees, sides, breads and desserts, and try one recipe a month.
• Offer a sandwich bar for elementary school cafeterias with sandwiches made on the line per meat request; condiments would be available on the salad bar.
• More self-serve options for students, including fruits and vegetables where they may make two choices from three or four side items offered.
Training Needs sub-committee members include Judy Thompson, Dave Fouts, Darlene Estes and Linda Sloan. One of their suggestions included additional culinary training in a workshop environment to set certification levels of training for food prep staff. Rather than hiring new culinary staff, bring current staff up to culinary standards.
The sub-committee for Increasing program participation/education is made up of Karen Jackson, Melinda Flowers, Jon-Trea Traylor, Cara Jernigan and Shelly Fox.
This sub-committee has incorporated two main topics. They plan to improve participation by educating students, parents and school staff about the meal programs including MealpayPlus services and the benefits of breakfast for all students.
The next meeting is scheduled for Aug. 25.
