SuperSAC members taste, vote on new food options

EDMOND — With the state’s new requirements for healthy lunches being put to the test for the past year in the Edmond Public School District, an additional requirement has been added for 2014-15 school year.

Child Nutrition Director Dan Lindsey told students, administrators and school board members at the monthly SuperSAC meeting, “It is meaningful for you to be a part of the selection of food products we will be offering next year. Students may prefer some items while adult representatives may like others.

“New state requirements say any food products made of wheat must be made of whole wheat. In the past we have made sure that at least half of the grains served were whole grains, but now we are moving toward a 100 percent whole grain offerings in the food products.”

Nine food vendors showed up Tuesday at Summit Middle School to meet with SuperSAC members. A.J. Legere, child nutrition supervisor, helped the vendors as they served samplings of hamburgers, egg rolls, pizza, biscuits and breakfast items including breakfast tacos and Southwest Egg and Cheese Sliders. Each food item offered was lower in fat and salt and wheat items were 100 percent whole wheat.

“The egg and cheese taco is on a whole grain tortilla and is on trend with the Latin flavor going so well right now,” said Ben Henderson with Sunny Fresh.

Santa Fe High School freshman Brandon Stephenson said he liked the personal pizzas best.

In addition to being made with whole grain wheat, one of the pizza crusts was infused with jalapeño peppers while one was plain, said Jerry Carter with Lakeland Marketing.

After sampling the items, each was voted on by the participants.

“The district strives to meet the nutritional needs of students within their age-specific calorie requirements,” said Amy Herrold, child nutrition supervisor and a registered dietitian.   

Meals, foods and beverages sold or served at schools meet state and federal requirements, which are based on the USDA Dietary Guidelines.

“Our focus is on enhancing the diet of students with more nutritious choices at school and by providing nutrition education that will help students form healthy habits that last a lifetime,” Herrold said.

Enhancements added to this year’s school menu included more fruits and vegetables.

There are about 23,000 students attending Edmond Public Schools this year.
